High-mountain tea of excellent quality should not be subjected to excessive heat. It is first gently roasted at a moderate temperature to eliminate excessive grassy flavors. This process is repeated three times. The temperature is then slowly increased, and the taste is tested. Finally, a higher temperature is applied to stabilize the tea's character. This light roasting process is best suited to bring out the delicate warmth and sweetness in the tea.

Artist: Mei Ling Chen

For this artwork, the main theme is set around the unique mountainous scenery of Hualien. During the research phase, it was discovered that the famous Chinese romance writer Eileen Chang had visited Hualien. Invited by the Taiwanese local literature writer Wang Chen-ho, known for "A Dowry of a Cow Cart," she explored his hometown. To capture this intriguing piece of literary history, a corner of the artwork features Eileen Chang and the Taiwanese water buffalo, echoing this interesting anecdote in the Chinese literary world. The mountainous part of the artwork utilizes a juxtaposition and overlap technique on the front of the tea canister to depict the steep cliffs of the Taroko Gorge. On the back, the shadow of the mountains is combined with the sea, representing the beautiful Qingshui Cliffs in Hualien.
